My name is Judith Starling. I moved to the UK at the age of 14 but grew up in a little German village with three bakeries, producing their own breads on site, every day. I've spent years trying to recreate that same freshly baked bread at home before moving on to Pizza, and now I love to share this passion with other aspiring bakers…

Questions that crop up regularly

Why Steel?

Steel absorbs, stores and transmits energy much more efficiently than stone. This means you can make wonderfully, crispy pizza bases at much lower temperatures. It is also indestructible, unlike stones. 

How hot does my oven need to go?

There is no minimum heat requirement. I know many people worry that their ovens don’t go VERY hot but rest assured that a steel will help your bake, even if it only goes to 230C. 

Why British Steel?

We only use British and European steel as Chinese steel can be more brittle and less weldable. This is generally due to Chinese steel having a higher carbon content.

Can I leave it in the oven the whole time?

You don’t have to take your steel in and out of the oven – it is quite happy to stay in there at all times.

Can I use it with a normal domestic oven?

Yes! Wild Baker steels are ideal for home ovens. Made in different shapes and sizes, you will find one that suits the size of your oven and your requirements. Even the largest, 30cm x 40cm steel fits into a standard sized British oven (which is around 45cm x 38cm) and leaves a gap at the front and the sides of the oven to help with air circulation during the bake. 

Can I use it on my BBQ?

Steels are fantastic on BBQs and are becoming ever more popular. They allow you to BBQ vegetables, fish and burgers without having them fall apart or through the grates of your BBQ. You will see that I also do a range for Kamado Joe and Ooni, with steels specific to these products.

Do I need a fan or an electric oven?

I use my steels in both, fan and electric ovens. 

Does it need sealing?

Yes, although this is really simple and you can find instructions here.
